今回の旅の舞台は、長野県のほぼ真ん中に位置し、アルプスの山々に抱かれた伊那谷北部の箕輪町(みのわまち)。 柏原さんがまず向かったのは、旬の果実や採れたての農産物が並ぶ直売所「ファームテラスみのわ」。柏原さんが特別に試食させてもらったのがこの地域で貴重なタンパク源として食べられてきた「蜂の子」や「いなご」。ここでしか味わえない独自の食文化を体験します。
そして、旅の目的地、地域の食材をタイ料理に仕立て上げる名店「GUUUT(グート)」へ。築150年のビール貯蔵小屋をリノベーションした一日一組限定のタイ料理レストランです。 ここで楽しめるのは地域の食材をシェフが発酵など独自の発想で仕立て上げる渾身のメニューの数々。3種のオイルで味を調えたブランド牛の「天龍牛の煮込み」の味とは？
