Recipe (30-40 buns):

Ingredients: 5 dl milk, 50 g yeast, 150 g butter, 1 dl sugar, ½ tablespoon salt, 2 generous tablespoons crushed cardamom, ½ tablespoon ground cinnamon, 800 g all-purpose flour, 1 egg.

Directions: Melt butter in a cooking pot and add the milk. Heat or cool until 37 °C. Pour mix into a large bowl and add yeast. Stir until the yeast is dissolved. Add sugar, salt, cardamom and cinnamon to the mix. Stir well. Mix in the flour and knead dough on a lightly floured surface until smooth. Place in a large bowl and let rise to about double size, about 40 minutes. Knead dough again, cut into 30-40 pieces and form into buns. Place buns on a sheet pan covered with baking parchment paper. Let rise about 40 minutes. Glaze with a whipped egg and sprinkle with sugar. Bake in the middle of oven at 250 °C for about 5-10 minutes. Allow to cool on a grate.
